Yellow Bell peppers are similar to red and green peppers in their nutritional profile. They are rich in Vitamin c, a, potassium, magnesium and other antioxidants as well as fiber. Yellow and red peppers are grown longer than green peppers, and are the same pepper, just grown longer, this is why they cost more.

Yellow peppers are great to cut up and dip in salsa, hummus, baba ganoush, guacamole or other organic dips as a snack. They are also great to cut up and add to salads, soups and other recipes.
